Take homemade mac and cheese to the next level with thiswood-smoked macaroni and cheese recipe. A maple or cedar plank infuses eachbite of pasta and chicken with smoky, rich flavors.
1 14 x 6 x 3/4-inch maple, oak,or cedar grilling plank
10 ounces dried campanelle orcavatappi pasta
3 tablespoons butter
1 cup chopped sweet onion (1large)
2 cloves garlic, minced
3 tablespoons all-purpose flour
1 teaspoon dry mustard
¼ teaspoon cayenne pepper
3 ½ cups milk
2 cups shredded gouda cheese (8ounces)
1 cup crumbled blue cheese (4ounces)
1 tablespoon snipped fresh sageor 1 teaspoon dried sage, crushed
1 pound skinless, bonelesschicken breast halves
Ground black pepper
Small fresh sage leaves (optional)
At least 1 hour before grilling,soak plank in enough water to cover. Place a weight on plank so it stayssubmerged during soaking. Grease a 9 3/8x9 3/8x2 3/8-inch disposable foil pan(poultry pan); set aside.
Cook pasta according to packagedirections; drain. Meanwhile, for cheese sauce, in a large saucepan melt butterover medium heat. Add onion and garlic; cook for 5 to 8 minutes or until onionis very tender and beginning to brown, stirring occasionally.
Stir in flour, dry mustard, andcayenne pepper. Cook and stir for 1 minute. Gradually stir in milk. Cook andstir until thickened and bubbly. Gradually add gouda cheese and blue cheese, stirringuntil melted and smooth. Stir in snipped fresh or dried sage.
Transfer pasta and cheese sauceto the prepared foil pan; stir gently to coat. Sprinkle chicken with salt andpepper.
For a charcoal or gas grill,place plank on the rack of a covered grill directly over medium heat. Grill,uncovered, for 3 to 5 minutes or until plank starts to crackle and smoke. Placechicken on plank. Place foil pan on grill rack, using a baking sheet to helptransfer the pan if necessary for stability. Cover and grill for 20 to 25minutes or until chicken is no longer pink (170°F) and pasta mixture is bubbly.
Slice chicken; serve with pastamixture. If desired, sprinkle with fresh sage leaves.
